Citrus Chili Chicken with Grilled Pineapple Tacos

Materials Needed: 
  • 4 Chicken Breasts
  • 2 Tablespoons Extra Virgin Olive Oil
  • 2 Tablespoons Citrus Chili and Garlic with Chia Seasoning
  • 1 Pineapple, sliced and cored
  • 2 Mangos, cubed
  • 1/2 of a Red Bell Pepper
  • 1/2 of a Green Bell Pepper
  • 1 Jalepeno
  • 1/4 of a Red Onion
  • 1/8 teaspoon Kosher Salt
  • 1/8 teaspoon Black Pepper
  • 1/2 teaspoon Sugar
  • 1 Tablespoon chopped Cilantro
  • 1/2 Tablespoon chopped fresh Mint
  • Juice from 1/2 Lime
  • 1/2 lime cut into wedges if desired
  • Corn Tortillas
  • Avacado (optional)

Project Steps


These delicious tacos are made with flavorful grilled chicken and an incredible grilled pineapple salsa!  Grilling the pineapple and other veggetables that go into this salsa give it a rich, sweet and smoky flavor that takes these tacos to a whole new level!

Step 1

Begin by placing your chicken breasts, the citrus chili and garlic with chia seasoning and the olive oil into a ziploc bag.  Shake until the chicken is well coated.  Set this aside while you continue working on dinner.

Step 2

Place charcoal in your grill, and get the coals going with your ElectroLight fire starter.  This is such a fantastic, easy and quick way to get your coals going for grilling! You could also use the NEW Electro-Torch. 

Step 3

Place your chicken and all of your vegetables and pineapple slices onto the grill to cook.  You may want to screwer your vegetables if they are too small to sit on the grill grate.  Grilling pineapple brings out a bit of sweetness that makes pineapple so delicious!  The pineapple and vegetables can be removed from the grill once they are cooked to your desire.  Be sure to cook the chicken until it reachers an internal temperature of 165 degrees F. 

Step 4

Chop the veggies and fruit (except the avacado) and mix them together in a bowl with the salt, pepper, sugar, cilanto, mint and lime juice.  This is your grilled pineapple salsa!  You can set it aside or place it in the fridge until you are ready to serve it.

Once the chicken is fully cooked, let it sit for abotu 10 minutes and then slice it.

Step 5

If you desire, you can heat your corn tortillas up for a bit over the stove or on a griddle.  Then place your chicken slices and salsa into your tortillas!  We added a few slices of avacado to each taco too!  These tacos are so full of flavor and are so delicious!  My whole family gobbled them right up and I can't wait to make these again!

I love spending time outdoors in the summer and cooking on the grill is a wonderful way to spend time outside, and keep the mess (and heat) of cooking dinner outside!  I really just love how grilled foods taste too!  They are so delicious!  And while a gas grill is convenient, real charcoal grilling is where it is at!  We have had a charcoal grill for a few years now, and love it, but it can take a while to get charcoal going (we don't use charcoal with lighter fluid).  So one of the best things we have ever gotten is the HomeRight ElectroLight.  This great tool saves a lot of time and makes grilling so much easier!  So today I decided to combine two of my great loves, grilled pineapple and tacos, and I created these delicious Citrus Chili Chicken with Pineapple Salsa Tacos!  They have incredible flavor and are oh-so-delicious!  And I think you will love them too!
