These Rosemary Lemon Garlic Chicken wings are a nice summer night recipe when you are craving chicken wings without using heavy barbeque sauce. It’s easy to prep in the morning, let marinate in the fridge all day, and then grill up for dinner. It’s also easy to adjust if you like the flavor of more garlic and less lemon, or adding in more rosemary for a stronger herbal flavor. Serve with some fresh bread, and sliced tomato from the garden for a simple summer meal! Or you can serve it up with this easy garden pasta as a side.
The best part is, if you don’t have a grill, these cook up just as well by baking them in the oven on a sheet pan at 375 F degrees (until the thermometer reaches 185 F- turning half way through.).
We used our Pit Barrel Cooker to grill our wings, and started it with the Electro-Torch Fire and Charcoal Starter. It made it so easy to get the coals going without messing with lighter fluid, or struggling with paper and sticks.
- 2 lbs of chicken wings
- The juice of 4 large lemons or approx. ¾ cup of fresh squeezed lemon juice
- 3 springs of fresh Rosemary
- 3-4 cloves of fresh garlic minced
- 1 tsp salt
- 1/4 cup olive oil in a large measuring cup
Gather ingredients, chop rosemary finely, and mince garlic cloves. Add to Olive oil.
Squeeze lemons into the olive oil. It helps to place a small strainer over the olive oil to catch any seeds.
Pour mixture into a non-reactive pan on the stove, and heat on low until the mixture is warmed through, stirring occasionally, do not let it boil. This will help release the flavors into the oil. Turn off the heat and let the marinade sit for a few minutes. Once cooled ( do not pour warm/hot marinade over the chicken), pour the marinade over the chicken wings in a bowl or into a plastic bag.
Let the marinade and chicken rest for a few hours in the refrigerator until you’re ready to cook. Always follow safe handling procedures for food prep and handling of raw chicken.
Start your charcoal with the HomeRight Electro-Torch Fire and Charcoal Starter. The nice thing about the Electro-Torch is it has two settings. One part of the dual switch lets you apply super heated air to start your fire. And the other switch blows air to fan the flames.
Remove the wings from the marinade, place on a tray, and let it the excess drip off. Discard any left over marinade.
Once your charcoal is started, place your wings on the grill, turning over when each side is cooked, and until the inside of the chicken reaches an internal safe temperature of 185 degrees F (Approx. 20-30 minutes).
Remove from Grill and let rest a few minutes, and enjoy!
