Walking Tacos

In need of a great outdoor summer meal? Walking tacos are always a fan favorite! Warm up the meat over the grill for a quick and fun dinner.

This summer we took our kiddos camping with another family for the first time. We went camping pre-kids before, but we just haven't gotten around to camping WITH kids until this summer! Each family took turns making two meals, so for one meal I made these deliciously, easy walking tacos. Not only are they yummy and super kid friendly, but they are perfect for camping because you literally just heat the meat up and EAT! Let's "walk" through this easy Walking Taco recipe for camping!!

We bought this ADORABLE mini charcoal grill for camping at the grocery store. I snagged it for FOUR WHOLE DOLLARS during their summer sale. It ended up saving the day along with our Electro-Torch because we got into camp later than anticipated and by the time we got setup it was getting dark and the wood wouldn't catch. Luckily, I brought our HomeRight Electro-Torch, this mini grill, and an extension cord and we were able to fire up the grill in just a few minutes!! I had pre-made the taco meat at home, seasoned it with my favorite Taco Bell seasoning, and I added a can of rinsed black beans to the mix so the beans were already in there. I placed the whole thing in a large bag in the cooler and brought it camping with us. When it was time to eat, I covered a cast iron skillet with foil and placed my taco meat directly onto the grill to warm up! The Electro-Torch heated up the coals in 2-3 minutes and we were ready to roll with warming up our taco meat in no time!!

In order to be most efficient with your meal, I suggest bringing along a tupperware container with all your toppings in it in one place so all you have to do is remove the lid and add a spoon for your guests!

Once your coals are ready to go, and your salmon is prepared, simply place your wrapped salmon over the coals on a grate and let it cook! Depending on how close to the coals the salmon is, how hot the coals are, how many coals you have, and a few other factors, it could take anywhere from 10-30 minutes for your salmon to cook properly. It is so easy to know when your salmon is perfectly cooked because it will turn from translucent and hot pink to opaque and light pink! It will also flake really easily.

Once your meat is warmed, you open your bag of Doritos and gently crush them up. Then you add in your toppings--cheese, lettuce, salsa, sour cream, olives, jalapenos...whatever you desire!

Once built, you can eat straight out of the bag with a fork and pitch the bag when done! Not only is MAKING this dinner easy, cleanup is easy too. You'll simply pull the foil from the cast iron skillet and throw it out. And then cover the tupperware containers back up and you're all done!!
